Hay Springs, Wyoming — Est. 2024
Fresh-baked bread, pastries, and coffee — made daily in small batches and served right here on Main Street. No shortcuts, no preservatives, just honest food that tastes the way it should.
Our Story
Main Street Grind began with a simple conviction: that the best bread is made slowly, with ingredients you can actually pronounce, and with someone who genuinely cares about the people eating it.
We bake every morning before the sun comes up — sourdough loaves with a 48-hour ferment, flaky butter croissants, seasonal fruit tarts, and cookies you'll be thinking about all day. Our coffee is roasted locally and pulled fresh throughout the day.
Beyond the oven, our market carries pantry staples, local honey, dairy from nearby farms, and the kind of everyday things that make a good dinner possible without a detour. If it's on our shelves, we'd eat it ourselves.

From the Oven
What's on the rack changes with the season. Here's what you'll typically find.
48-hour fermented country loaf with a crackling crust and open, tangy crumb. Baked in a Dutch oven, cooled on the rack.
French butter, laminated by hand, folded three times. Flaky, golden, and properly heavy. Available plain or chocolate.
Single-origin and house blend, roasted locally and pulled fresh all day. Drip, pour-over, or espresso — your call.
Brown butter chocolate chip, oat raisin, lemon bars, and seasonal variations. Made in small batches — often gone by noon.
Shortcrust pastry filled with pastry cream and topped with whatever fruit looks best that week. Limited daily quantity.
Boiled then baked — chewy interior, shaggy crust. Plain, everything, or cinnamon raisin. Toasted to order with house-made cream cheese.
Ask about our daily specials — they change with the weather and the harvest.
The Market
Not everything we carry is baked in-house — but everything we sell meets a standard we'd set for our own table. We partner with regional farms, small producers, and makers who take their work seriously.
Think: raw honey from Wyoming apiaries, pasture-raised eggs, aged cheeses from nearby creameries, olive oil, pasta, canned beans, spices, and the basics you actually need. If we wouldn't put it in our pantry, it's not on our shelf.
Local dairy & eggs — from pastured flocks and herds within the region
Raw honey & preserves — wildflower, clover, and seasonal varietals from local apiaries
Pantry staples — olive oil, pasta, grains, canned goods, and spices we'd actually use
Cheese & charcuterie — selections from nearby creameries and regional producers
